If you have a partial bottle of wine in the back of the fridge, and it
stays there for a while, it will make itself into vinegar.  Leaving it
out on the counter, uncapped, will hurry the process along, but you risk
getting nasties growing in it.

I imagine that any flavored wine--peach wine, apple or raspberry wine, et
al, would make flavored vinegar out of itself.


BTW, a fellow who makes beautiful period leather drinking jacks says that
his differ from true authenticity by having parafin coating inside rather
than Welser's pitch, which was the commonally used substance, but which
we know today is a cancer risk.


I've never heard of a beer or ale vinegar--malt vinegar, yes.  Is this
from ale, you brewers out there?
