The Amish come to the local flea market and occasionally have home-made
cottage cheese. I suspect that the difference is the rich creamy buttermilk
they use in the cottage cheese. It has a definite luscious sour taste and is
very rich and creamy  which is not at all like the store bought kind. The
addition of a little salt and pepper makes this a food fit for the Gods, IMO.
