Cheese Pie

Saltine crackers
Extra Sharp Cheddar (or other good, strong cheese)
Milk
Butter

Preheat oven to 450 F.
Butter a 2 quart casserole.
Layer saltines and cheese until approx. an inch and a half from the top.
Bottom layer should be crackers and top layer cheese.  
Dot top with butter.
Pour milk until top layer of crackers is just covered.
Bake until thickened, (check after a half hour).  Center should be slightly
set, neither runny nor dry.  

I sometimes substitute sour cream for some of the milk, or buttermilk for all
of it.
