When I was autocratting in Atlantia we varied our serving methods. We used the
"one person from each table" method you mentioned - which worked well enough
but was never terribly elegant. We also asked for servers to volunteer when
sending in their reservations and usually gave them a price break. Volunteers
were often able to sit at feast with their friends.  Sometimes, we arranged
for servers to eat separately, sometimes before the feast was served to
everyone else. We also had people who chose to eat offboard for whatever
reason who frequently volunteered to serve feast. 

For special events, we generally recruited within the barony and made servers'
tabards in the livery colors of the barony.  Generally we had a head server
who coordinated everyone else and usually had two or three people who
specifically served High Table - often officers of the group or local people
of rank. The day I was given my AOA, the herald of the event decided that we
who had gotten AOA's that day (a 12th Night.....there were about 9 of us)
should serve High Table and announced it to the hall. Talk about grace under
fire. Not one of us had a clue what we "ought" to be doing. We made it up as
we went along.

I haven't been to many feasts lately, so I am not sure what the popular method
of acquiring servers is now.
