You do have a problem.  I've had this happen to me, with disastrous
results.  The Autocrat's reputation is at stake here, too.  Can you sit
down with the A., your deputy, and the Seneschale if necessary, and
explain, using your menu, why it is necessary to have trained servers?  


You don't have to have paid or price-break servers.  See if you can get
some who are willing to do this as a service.  Since your husband is
willing to train them, what about forming a 'Server's Guild'?  Look up
all the fancy serving suggestions in ref books, and I know Stefan has
some in the Florilegium.  Would willing seamtresses made shire tabards
for the servers?  Servers in matching tabards looks really great--keeps
their garb clean, too.  Make a big deal of how wonderful they are, so
pride takes the place of feast reductions. 


I had a friend once who did such a super job of server training that my
life was MUCH easier and happier.  We sat down and planned everything
ahead of time, right down to "Which spoons and bowls have to go back to
the kitchen at what time to be washed and ready for their next use?"
