Phlip:

Unlimited access to REAL apple cider? I'm positively chartreuse with envy!
Let's see: There's hard cider, just put it in carboys, unrefrigerated, and
let it ferment at it's own pace. Use your nose to check the process. You
want to refrigerate the resulting hard stuff before it goes to vinegar. Then
take the resulting whooppee juice and freeze it. The liquid left when the
rest has frozen is apple jack, and dangerously yummy. Later down the line,
you'll also get a lot of cider vinegar (which is wonderful stuff with
multitudes of uses). Hard cider is one of those things with which you can
eat, drink and be merry. It makes a great marinade for pork and venison, and
a pretty terrific base for barbecue sauce.

Walk in peace,
Wolfmother (who lives in Florida, and therefore has no access to real apples,
let alone real cider, except in the grocer's produce section, at great price)
