As one member of this list, I highly recommend Scully's works.  He gives
you the originals, so if, in your more learned and authentic endeavors,
you want to change his redactions, you can do this.  He is writing for a
commercial market, however scholarly his works are, and the majority of
the book buyers will want some more modern adaptations than we might. 
This will be true for Maggie Black's books, for Redon et al, for Santich,
and lots of others.  These books have to sell, or they won't get
published, despite pretty pictures in some of them.


The information is much more scholarly in Scully than in most books, and
that is what we need to learn.   I've learned a great deal, and use him a
lot in articles and classes.  As with anything you learn,
cross-reference, cross-reference, cross-reference. When you find
something in a recipe that you question, try it your way, and put it up
for discussion on the list.  Buy his books!!!
