SC - Sideboard

For our Candlemas in February, I am doing a 5 hour sideboard (2pm-7pm). 
There will be dancing and entertainment all afternoon and early evening 
with a court afterward. My plan is to place a new course out every hour. 
Right now, I haven't decided yet whether I want that to be a full course 
each hour (meats, veggies & dessert in each course) or each course have a 
theme (meats one hour, veggies the next, desserts the next and then start 
over so that the 5 pm is meats & veggies and 6pm is desserts. What's 
ya'lls opinions?

Also, I have started looking thorugh all my sources for period recipes 
that would be good finger foods. If anyone has something they would like 
to suggest I would appreciate it.
