SC - Verjuice - just a couple of questions

I use wine vinegar as a substitute but that would be a problem I would 
think. I have used lemon juice and sometimes a mix of lemon and orange 
juice (when the lemon is just too strong). I also heard that some folks 
use cider vinegar although I had never thought to try that.
