SC - A question on Servers

since our big event has grown large enough to severely strain our human
resources. Our folks are so exhausted by feast time that asking them to serve
the food as well is just way too much. (Yes, of course we need more folks!

	Oddly enough, though, one of the reasons we started doing this was to *cut
down* on the folks who got missed in serving, and it seems to work pretty
well. If they won't shut up and listen to the herald announcing the next
course, they can't berate the poor server for food they didn't get.........
;-) You do get the "mob" effect, but it's not really much of a problem, since
we have a big serving window to set dishes on/hand things out through. We
stand there giving instructions and passing more platters up as they file by.
Pretty much what we'd do if we had servers, in fact!
	That said, of course having official servers is the best option, where it
will work. But this isn't a terrible alternative when it won't for whatever
reason, at least not around here.........
