My recipe for canned apples or apple sauce

1 peck of apples, washed, cored, and quartered, (for applesauce, peel them
also) 
2 cups white sugar
2 cups light brown sugar
Cinnamon to taste (I use about a Tablespoon full)
8 cups water

Place apples, sugar, and cinnamon in water and boil over a warm fire until
apples are tender.  For canned apples to use for pies, simply ladle hot apple
mixture into clean jars, wipe the mouths of the jars clean, and cap.  Allow to
cool away from drafts.  For applesauce, cook a bit longer, until the apples
are soft, then force through a sieve, return to the pan just long enough to
heat, then place in clean jars, wipe the mouths of the jars, and cap.  Allow
to cool away from drafts.  

To keep the color of the apples, you can add about 1/4 cup lemon juice, or use
a commercial product like Fruit Fresh.
