SC - Apple Loaf

I found one in Simply Delicious Cooking2:
  

      Apple and Spice Loaf
      2 cups       Apple juice( or apple cider in this case)
      1 1/2 cups   Granulated sugar
      1 cup        Oil
      1 tbsp       cinnamon
      3/4 tsp      Cloves
      1 tsp        nutmeg
      1 cup        raisins
      1 1/2 cups   apples-pared, cored and shredded
      4 cups       Flour, Pastry (all purpose will do)
      4 tsp        baking powder
      1 cup        pecans, Broken (optional of course)

   Simmer the apple juice, sugar, oil, spices and apples over medium 
heat for 5 minutes.  Remove from heat and cool to room temperature. 
Blend in the flour, baking powder and nuts.  Mix thoroughly. Pour into a 
10" x 4"(25x10cm) greased and floured loaf pan.  Bake for 1 1/2 hours in 
a preheated 350degree F(180 C) oven.  Cool 15 min before turning out 
onto a cooling rack.



Here's an interesting on from the same book, not a cake or cookie 
though:

         Apples Chatelaine
         1 1/4 cups     water 
         1 1/4 cups     Granulated sugar
         1              Vanilla bean 
         6              large Granny smith apples-pared and cored 
         3 tbsp         butter melted
         1 cup          Cherries-halved
         1/2 cup        Crushed macaroons
         1/4            vanilla sugar
         4              egg yolks
         2 cups         milk- scalded
  In a sauce pan boil the water, sugar, and vanilla bean. Reduce to 1 
1/4 cups.  Pour into a shallow pan, arrange apples around in the pan.  
Brush apples with syrup and butter.  mix the cherries with the macaroons 
and stuff into the apple core hallow.  Bake the apples in a preheated 
350 F oven for 20 min or until apples are tender,  PLace on serving 
platter. 

Beat the vanilla sugar  in the egg yolks until very light and pale.  
Whip in the warm milk, cook in a double boiler stirring until thick. 
Remove from heat and serve over apples.
