SC - suggestions on A&S entry

There will be an A&S display at the Crown my shire is sponsoring in 2
weeks.  Thought I would do a period dish for anyone who would care to taste
and provide documentation.  I have a recipe for apple tarts I thought I
might do but I am open to more exciting suggestions.  Anyone with any ideas?
