As Bear said, Platina (Italian 15th c.) describes how to make bread; recipe
in the _Miscellany_.  I understand there is also a basic bread recipe in
Gervaise Markhams's _The English Housewife_ (sp?) which is English but is a
century and a half after your manuscript.  Wulfric the Mad Baker has done
that one, and I expect I can get his recipe if you want it.

For salads, there is one in Forme of Cury (14th C. English, so not too far
from your manuscript). I am almost sure someone typed it in recently on the
"mixed field greens" thread; if you can't find it, let me know and I will
send it to you.

It will not offend most vegetarians, but vegans eat no dairy products or
eggs, so will not want butter.  Isn't there at least one Lenten greens
recipe where they are cooked in almond nilk instead?

Probably not.  But let me reccomend our article "To Make a Feast" in the
_Miscellany_ on how to plan and cook a feast.
