In Italy currently they eat the whole artichoke (fuzz and ALL).  They use young
artichokes, not the full ones like you find commercially.  This makes them tender and
easily edible (YUM)  They even stuff them with spec(?)( a type of italian bacon, which
they have many types) and bread crumbs with lots of butter.  You eat the whole thing
with the exception of the points on larger leaves.
