Actually the Persian influence would be VERY appropriate since that part of
the Empire was carved from the Persia. :-) The Persian/Middle Eastern
influence on Greek and Turkish cookery, as well as Slovakian and Rusiian
cookery, is very evident in period  and extends into the current middle ages.
So far as Egyptian cookery is concerned, the differences between it and the
rest of the Middle East are negligeble, consisting mainly of regional
variations on dishes that were used throughout the al-Islam.
