It has a texture that can only be described as 'delicate'. It sort of melted
in the mouth, so to speak. OTOH, it was not 'slimy' or gelatinous. It was ,
well, rather like cooked rattlesnake flesh. And , before anyone asks, it
tasted about as much like chicken as turkey does. :-)
