One of the best BBQ sauces that I canthink of is simple to baste with dry or
sweet vermouth. Vermouth by nature contains all the spices one normally
associates with "Italian" cookery. Add a quarter cup of olive oil , 6 garlic
cloves crushed, 1 small onion finely minced per liter of vermouth. Brush on
with a bundle of fresh oregano or basil.
Use dry vermouth with poultry or fish and sweet vermouth with red meats
including ostrich.
