SC - More sourdough info

Someone new asked recently about sourdough breads. I mentioned a few
files in my Florilegium that might be of interest. In updating my
files just now, I realized that some of the info I was thinking of
was in the segment I just added to this file. While it may be a few
weeks before this file gets updated, as I just updated the files this
morning, I thought I would mention this file. I can send this updated 
version to anyone who wants it my email, though.
