Isn't the meaning of corn to be specifically maize purely an American thing?
Britain uses corn to refer to all grains (e.g. the Corn Laws).  Perhaps we
are thinking too locally about this translation -- "cornflour" could mean
that you have the option to use whatever flour you happen to have available
whether it be wheat, rye, etc.
