Most of those same oriental food stores that sell rice flour will also have
wheat starch. Otherwise, purely from the perspective of getting a finished
product most similar to what you'd get using wheat starch, use corn starch. I
won't tell.

Rice flour will do the job, but corn starch is actually more similar to amulum
in use.
