hi all from Anne-Marie...
this recipe looks very yummy, and is very different from the ones I've
reconstructed from various French sources.
what's the source for this one, or is it just a really tasty perio-oide
tarte?

While not the same recipe at all, there is a NICE recipe for ' a tourte' in Meneangier (Goodman of Paris) on page 278 of my copy. It uses various greens, two cheeses and egg to moisten. Some spice as I recall. My fellow Kitchen Steward and I will serve it with a braised rabbit recipe from Forme of Curye and Saffron Rice at an upcoming February feast.
