oop -SC - A rather unusual request

First, as a type I  diabetic, I can tell you never to prepare a special
dessert for me.  I am limited to very basic desserts, such as perhaps a sugar
free gelatin, or five or six vanilla wafers, so I have learned to live without
dessert.  I would recommend for someone with a wheat allergy something besides
cake for dessert.  Perhaps something with a gelatin base (pistachio fluff
perhaps) or a crustless cheese cake.  

Pistachio fluff

1 pkg pistachio instant pudding mix
1 pint sour cream, or cottage cheese, or plain yoghurt
1 cup mandarin oranges, or pineapple chunks

stir dry pudding mix and fruit into dairy product, chill, and serve.
