Salut!
You should also make Lord's Salt.  It's really nice with small hunks of
bread.  It mae a terrific snack at pennsic (though messed with the meals I
had planned on using it...)  As for the sausages, if you are lucky and can
get a machine...  it's easy.  I did it by hand, and it worked well enough.
