There are land-locked salmon which do not go to sea.  There are fresh water
and sea water trout, some of the latter return to fresh water to spawn.
There are fresh and salt water sunfish and bass, which are related to the
perch.

I don't know about salmon re-adapting to fresh water, but the stop eating
once they leave the sea (you can't get them to take a lure in fresh water)
and they beat themselves to death going back upstream to spawn.  By the time
they reach the spawning ground, most of the salmon have open sores and
fungal infections, which will kill them, even if they could adapt to fresh
water.  This is from first-hand observation.
