I have several suggestions:

First, our barony has an award for people who do the scut work.

Second, recruit a whole household, preferably one with a fairly strong
structure.  In our barony, generally my house cooks, and the fighting
household cleans for us.  

Third:  Every now and then, five or six of us ladies give a hot oil massage
(in the most public place we can find) to whichever of the clean-up crew has
won our heart-felt gratitude.  This leads other men walking by to say "wow,
how does s/he rate?" and we say, this is our household service award!

	Finally, if all else fails, be very blunt.  Say, I/we are willing to
cook this feast, but I/we =will not= stay and clean up, at least not without
a substantial commitment of help.  Then stick by your guns, and get specific
people on the hook to do the cleanup.  Then, if it doesn't get done, go to
the next meeting and say "I want to report on the feast; x, y and z
committed to clean up until it was finished, and it didn't happen."  If this
is important to you, be hardnosed about it, very polite and very firm, until
the situation changes.  And when it does change, be very positive and very
publicly grateful for the help.
