Okay, let's walk this through: Kat writes that:

 Here in the Central West...
> It is (sadly) a very common practice out here for the head
>cook to be the person pushing the mop at 1 AM.

And explains it as due to people having their dressy clothes on, and so not
wanting to work, and their children with them, and so not wanting to stay
late; and even when people do volunteer, it turns out that "the people who
volunteer for the committee have "other commitments" and you
>get one or two folks who sweep or wash dishes for about an hour and then
>have to go home."

She says they can't even hire a dishwasher, and have to get outsiders to
serve tables.

So, why are you (and the other cooks) doing feasts? Unless there's a
dynamic going on that hasn't been described (such as, the group doing the
cooking/cleaning/serving etc. is rotating, so that everyone gets a chance
to sit and everyone gets a chance to work, just not all at the same
events), what you have is a bunch of people working their butts off for
folks who want to come to a feast like they'd go to a fancy restaurant...
only cheaper.... to dress up nicely and sit and be waited on, so they can
waltz off afterwards and go home.

Stop cooking feasts; have potlucks, and let them take their empty serving
bowls home afterwards.
