  Regarding Syrosye:

I have made this several times, sometimes with cherries and sometimes with
strawberries (one of the people i camp with is deathly allergic to
cherries).  The texture that is most popular is one that is too thick to
run, but not thick enough to stand by itself, of course the longer it sits,
the thicker it gets.  I have made it in advance and kept it in the cooler
(was very thick).  I have also made it on site, much thinner.  There is
rarely any leftovers....
