SC - Wheat vs Spelt Icelandic Chicken doughs

[ i do realize it is wheat, but it is packaged and sold as spelt, and it is less
confusing to talk about wheat and wheat spelt....and i love the way odd grains
have been coming back in the last 30 or so years thanks to the heirloom foods
interest groups!]
