Having been in similar situations before the kitchen crew I work with
(under the supervision of Baroness Eleanor of River Haven - one of the
"Best Feast-o-crats" I've worked with) we have implemented the process of
"Clean as you cook"

This way we have only the serving bowls and platters to worry about at the
end of the night and can usually rely on others to help clean the hall

(Although there is a standing self-inforced rule that the Feastocrat,
autocrat & major kitchen staff are the last out the door to ensure all is
cleaned)

Whether this situation is a "good one" - the hours are long (from 7am to
past midnight on the go) and the feet usually threatening mutiny - we've
found that it is less stressful to rely on a small select crew than to
expect many of our regular attendees to "do the right thing and help
out".....

Pride is also a factor
