Corwyn, I would recommend, at the least, based upon the menu you posted,
sending the meat pies out FIRST, then the roast beef, for the course.  This
allows people to fill up on the meat pies (a little) before the roast beef
comes out.  Putting the beef, pre-sliced, on the rice and pre-sauced, as
someone suggested, is a good trick for making a little go a long way.  Just
be careful about the vegetarians (who then cannot eat the rice) and people
allergic to garlic (who then cannot eat either the meat or the rice).

I do agree that 20 ounces per table of eight, which works out to 2.5 ounces
per person UNcooked, is far too little meat per person.  Remember, cooked
meat is smaller than raw meat, in size and weight.  (This is why
quarter-pound and so on burgers have small type that says "precooked weight"
asterisked somewhere.)
