Gunter give good feedback re: taste balance....

doh! of course! swapping the apples and onions for the carrots makes
perfect sense. and the beef olives I do are pretty peppery...hmmm.

in the third course, the cherries in snow are pretty tart, but you're
right, of course that we want to make sure that this balance is correct.
