Hi Sindara,

I would expect that all of the garlic clove, or the whole bulb, would be
used by the commercial producers.  It would take too much labor to remove
the small interior, and most of us never knew it was different.  You can
probably eat garlic more comfortably if you prepare it yourself, a la
Phlip's directions.
