SC - another - Rose water question

I got a post from a friend in South Africa last year, telling me how she
makes rose water.
I've gone and filed it 'somewhere', but what she does is put the petals
and water in a non-reactive pan--I'll use a glass Corning wear one, then
bring to a simmer.  In the bottom of the pan is a cup that holds the rose
water.  You put the pan lid upside down, so the rose water condensing on
the lid drips down the handle, falling into the cup.  She does violets,
too, I think.  Or maybe it was lilac, but I thought lilac was poison. 
Haven't gotten enough roses blooming to try it, but hope to, one day.

I don't know the proportions of petals to water.  Anyone have an idea?
