First of all, who ever measured and used a recipe?
My Plain and Simple Potato Salad
5 lbs. potatoes, peeled and diced to about 1/2" cubes
3 eggs
1/4 cup onions, diced very fine
1/2 cup sweet pickle relish
1/2 to 3/4 cup mayonaise
salt and pepper to taste
Place potatoes and eggs in a large boiler and cover with cold water. Bring
to a boil, cover, remove from heat and allow to sit for 20 minutes. Remove
eggs. Place in an icewater bath for approximately five minutes, peel, and
dice fine. Drain potatoes. Mix all ingredients, adding just enough
mayonaise to make the salad the right consistency. Add salt and pepper last.
Chill at least overnight to blend flavors. Serve cold.
