Possibly, possibly. I believe the standard American method, in those
parts of the USA where they're eaten, is to fry young ones like chicken,
and to bake mature specimens something like a ham (parboiled in seasoned
water, an optional frying to brown, then bake with or without a glaze)
with sweet potatoes in the pan.

Same for racoon, BTW.
