Except perhaps for the steak, but I bet you're right. I just happened to
have defrosted my freezer today and ran across about two pounds of
shrimp heads and shells, and a quart of fumet, and Gunthar inspired me
to make a pow'ful s_rimp essence. I make a reasonably good etoufee, but
have never tried doing a gumbo, and since I more or less think either in
Cantonese or Provencale while cooking, bouilliabaise seemed a good idea.
