Stefan, if you read the last line of the recipe it indicates that the fish is 
warmed again in FRESH water which would remove the lye. People in the current 
middle ages who eat hominy do not eat it because of the lye used in making 
it. The lye is removed by the next step of cooking as in the fish recipe.
