SC - Potato salad - my mom's recipe OOP

Since I haven't seen anything that resembles my mother's potato salad, here
goes:

Mashed Potato Salad

Start with mashed potatoes :  my mom used instant (much better with real
ones).

Add to taste:
diced dill pickle (we used hamburger dill)
minced fresh onion (added to the hot mashed potaoes to cook slightly)
chopped hard-boiled eggs
salt & pepper

Thin with pickle juice to get to the consistency you want.

No mayo -- very low-fat.  Keeps well.
