Whoops, you caught me ;-) I was deliberately not specifying a particular
type of knife, other than sharp and comfortable to use, because I'd like to
see a variety there so people can decide for themselves which they prefer to
use- part of the intention is to let each of you use each other's blades for
different parts of the task.

A boning knife would be preferable to a fish fileting knife, but either will
work. Serrated edges are almost useless, and I don't like the stainless
ones, in part because they're so hard to sharpen- an entire animal usually
requires at least one good sharpening, either before or after.
