You might buy a little extra and try making candied ginger some time.
While I know that there are some period recipes that apply, I have used the
recipe intended for angelica root in "Joy of Cooking" to very good result.
What I make is browner that the store bought, a bit tastier and stores quite
well in a sealed jar on the shelf.
