For your vegetarian feast, try looking up dishes labeled "for Lent".
Medieval Lenten rules were quite strict and did not allow any animal
products including milk & cheese.  Fish allowed, otherwise all was
vegetable.  Admittedly they classified anything that lived in the water as
a fish, for instance you'll want to avoid any dolphin dishes!!

My favorite Curye on Inglische may not have redactions but it sure does
have a lot of recipes calling for almond milk!  Try your darndest to get
unsweetened marzipan paste if you try for almond milk, because except for
the sugar, it would be ideal for turning into almond milk.
