Italian pasta seems to predate at least Marco Polo's Chinese expeditions.
We had a discussion on this a while back. I think some of these comments

Yes, I believe from previous discussions here, that England vs. the
Continent does provide some examples of regional variations as does
food from the American colonies vs. food from England in colonial times.
