I have used the regular, large quince in jellies many times. My folks had a 
tree in our yard. They are VERY tart and I like them best mixed with another 
fruit for jelly. They make an easy jelly too, because they are naturally full 
of pectin.

Who still hasn't forgiven the snowplow driver who ran over my 5 year old 
dwarf quince the winter after it first bore fruit.
