Possum is the only animal my mother-in-law aims for on the road.

In many of the recipes I've read down here in the Ozarks, they recommed
catching a live one, then feeding corn for a few days to make sure it's fat
enough, and less gamey tasting (not that I've ever done this myself, mind
you)
