I recently made a giant nef out of gyngerbrede for a feast I cooked; by the
end of the evening (in humid Atlanta weather), the ends of the boat were
drooping....

Wonderful! Roz didn't mention *that* when she was raving about your
feast....... ;-) I just made a batch for the Royal's lunch at Tourney of the
Foxes--first time I've gotten around to doing so. I definitely didn't cook
the honey long enough! It's a bit better than the batch the lady who started
the thread mentioned, but it's still just now beginning to crust over, after
nearly a week. Had to add much more bread to it than the recipe I was going
by (Cariadoc's) called for, too. I was wondering if I should have dried the
crumbs out a bit first, so I felt better when Master A. suggested that they
should indeed be moist......... ;-) Glad I ended up rolling it into balls and
stamping them--that gave me an excuse to roll it in sugar, which is helping
to harden it, I think. Ah, well--at least the stuff *tastes* yummy. I won't
mind a bit if there are leftovers! ;-)
