That depends.  :-) 

In the old Jewish tradition of answering a question with a question, what 
kind of latkes do you want?  The grating disc on my food processor 
produces matchstick slivers of potato, which are just held together by 
the egg mixture.  Both my uncle and I make latkes that have sort of a 
bird's-nest look.  My grandmother grated her potatoes more finely, and 
produced patties with a smoother texture.  Either is a valid expression 
of the latkes art-form.  It's mostly a matter of texure and appearance.
