You might want to look at some of the files in the FOOD section of my
Florilegium. There have been a large number of meat dishes discussed
on this list since it began over 2 1/2 years (gee, it doesn't seem that
long) ago. Most of the period ones can be found in the Florilgium. Your 
choice may depend upon how exotic you want to get. Here are a few files

Hopefully this will give you a few ideas and recipes to start with. I did not
mention the files with fish and seafood recipes since I assumed by meat you
meant animals. As you can see there have been a wide variety of meats discussed
on this list. We're still trying to find out if there is any meat that Ras
(for instance) will not eat. :-)
