I have been getting corospondance from this gentleman about his cooking
guild, and he just sent me some recipies they've worked on or are about
to work on.  This was one of them, and it is from a source I'm not
familiar with.  Given the date, are these likely to be white potatoes, or
are they probably the sweet kind?

3. Side Dish (Period POTATOES)
Another. (Lancelot de Casteau, ca. 1604)

Take the sliced potatoes and let them stew in butter, chopped marjoram
and 
parsley.  Then take four or five beaten egg yolks with a little wine, and

pour them over it when it is cooked, and pull it off the fire, and serve
it 
forth.
