Perhaps this file in the FOOD-VEGETABLES section of my Florilegium might
answer some of your questions on the periodicity of potatoes and some
good recipes for carrots:

In some ways, turnips can substitute for potatoes. Check this file:

While I haven't had a turnip dish that I enjoyed because of the bitter
taste, others do seem to enjoy them. And there are some methods given
in this file for reducing this turnip taste.
